  • 2 cups milk
  • 1 cup uncooked grits
  • 1 tablespoon Creole seasoning
  • 11/2 lb large shrimp, peeled and deveined
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 3/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon shredded lemon rind
  • 2 teaspoons Sriracha
  • 4 oz shredded smoked Gouda cheese
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • You should also have 1 bag mixed green salad and half cup salad dressing.

 

Preparations:

Firstly, combine sweet potato and water to cover in a medium saucepan. Bring to a boil over medium high; reduce heat and simmer 12 minutes or until tender. Then Drain it; let it be cool and peel.

 

Mash Potatoes equal to 1 cup. Bring milk and 2 cups water to a boil in a large saucepan over medium-high heat; gradually whisk in grits. Reduce the heat to medium-low and simmer, stir occasionally, until thickened. Sprinkle Creole seasoning over shrimp. Heat oil in a large skillet over medium-high heat; add garlic and cook it for 30 seconds. Add shrimp and cook, stir occasionally for 2 minutes or until shrimp becomes just pink. Add green onions, cilantro, lemon rind, and Sriracha; cook it for 3 minutes. Stir sweet potato, cheese, butter, salt, and pepper into grits. Serve shrimp over grits. Toss salad with dressing for the final touch and serve immediately.
